    1. Campfire Nachos

    Ingredients:

    Campfire Nachos
    • Tortilla chips
    • Shredded cheese (cheddar or a Mexican blend)
    • Canned black beans, drained and rinsed
    • Sliced jalapeños (optional)
    • Diced tomatoes
    • Chopped green onions
    • Sour cream
    • Salsa

    Instructions:

    1. Prepare the Fire: Start your campfire and let it burn down until you have a bed of hot coals.
    2. Assemble the Nachos: In a cast-iron skillet or a disposable aluminum pan, layer tortilla chips with shredded cheese, black beans, jalapeños, and diced tomatoes. Repeat the layers as desired.
    3. Cook: Cover the skillet with aluminum foil and place it over the hot coals. Let it cook for 10-15 minutes or until the cheese is melted and bubbly.
    4. Serve: Carefully remove the skillet from the fire. Top the nachos with chopped green onions, sour cream, and salsa. Add cooked ground beef or shredded chicken to the layers for added flavor.

    2. Foil Packet Sausage and Potatoes

    Ingredients:

    • Smoked sausage, sliced
    • Baby potatoes, quartered
    • Bell peppers, sliced
    • Onion, sliced
    • Olive oil
    • Salt and pepper
    • Dried Italian seasoning
    • Fresh parsley, chopped (optional)

    Instructions:

    1. Prepare the Foil: Tear off large sheets of heavy-duty aluminum foil. You’ll need one per serving.
    2. Assemble the Packets: In a bowl, combine the sliced sausage, potatoes, bell peppers, and onions. Drizzle with olive oil & season with some salt, black pepper & Italian seasoning. Toss to coat evenly.
    3. Seal the Packets: Divide the mixture evenly among the foil sheets. Fold the foil over the mixture to create packets and firmly seal the edges.
    4. Cook: Place the foil packets on a grill grate over the campfire or a stove. Cook for 30-40 minutes, occasionally turning until the potatoes are tender.
    5. Serve: Carefully open the packets (watch out for steam) and sprinkle with chopped fresh parsley if desired. These packets can be prepared and stored in a cooler until ready to cook.

    3. One-Pot Pasta Primavera

    One-Pot Pasta Primavera

    Ingredients:

    • Pasta (penne or fusilli work well)
    • Cherry tomatoes, halved
    • Zucchini, sliced
    • Bell peppers, chopped
    • Garlic, minced
    • Olive oil
    • Vegetable or chicken broth
    • Dried Italian herbs
    • Salt and pepper
    • Parmesan cheese, grated
    • Fresh basil or parsley, chopped (optional)

    Instructions:

    1. Heat the Pot: Place a large pot over your campfire grill grate or camping stove. Add a drizzle of olive oil and sauté the minced garlic until fragrant.
    2. Add Vegetables: Add the cherry tomatoes, zucchini, and bell peppers to the pot. Cook until they begin to soften, a few minutes.
    3. Add Pasta and Broth: Pour enough broth into the pasta to cover the ingredients. Sprinkle in the Italian herbs, salt, and pepper. Stir to combine.
    4. Cook: Lower the heat and let the mixture simmer once the mixture reaches a boil. To avoid sticking, stir from time to time. Cook until most of the liquid has been absorbed and the pasta is al dente.
    5. Serve: Remove from heat and sprinkle with grated Parmesan cheese and fresh herbs if available. Serve warm. This dish is versatile; feel free to add or substitute any vegetables you have on hand.
