    1. Koshari

    Koshari

    Koshari is a beloved Egyptian street food that combines rice, lentils, pasta, and chickpeas, topped with a zesty tomato sauce and crispy fried onions. 

    It’s a hearty and satisfying dish, perfect for a summer meal.

    Ingredients:

    • 1 cup rice
    • 1 cup brown lentils
    • 1 cup small pasta (like ditalini or elbow)
    • 1 can chickpeas, drained and rinsed
    • 2 large onions, thinly sliced
    • 4 cloves garlic, minced
    • 2 cups tomato sauce
    • 2 tablespoons vinegar
    • 1 teaspoon ground cumin
    • Salt and pepper to taste
    • Oil for frying

    Instructions:

    1. Cook the Lentils: Rinse lentils under cold water. Put them in a saucepan, cover with water, and heat until they boil. Reduce heat and simmer until tender, about 20-25 minutes. Drain and set aside.
    2. Cook the Rice: In another pot, cook rice according to package instructions. Set aside.
    3. Cook the Pasta: Boil pasta until al dente. Drain and set aside.
    4. Fry the Onions: Heat up oil in a saucepan over medium heat. Add sliced onions and fry until golden brown and crispy. Remove and drain on paper towels.
    5. Prepare the Tomato Sauce: In the same pan, add minced garlic and sauté for a minute. Add tomato sauce, vinegar, cumin, salt, and pepper. Simmer for 10 minutes.
    6. Assemble the Koshari: In serving bowls, layer rice, lentils, pasta, and chickpeas. Top with tomato sauce and garnish with crispy fried onions.

    2. Molokhia

    Molokhia

    Molokhia is a traditional Egyptian green soup made from jute leaves, known for its unique texture and flavor. 

    It’s often served over rice or with bread, making it a light yet satisfying summer dish.

    Ingredients:

    • 1 package frozen molokhia (jute leaves), thawed
    • 4 cups chicken broth
    • 4 cloves garlic, minced
    • 1 tablespoon ground coriander
    • 2 tablespoons butter or oil
    • Salt and pepper to taste
    • Cooked rice or bread for serving

    Instructions:

    1. Heat the Broth: In a pot, bring chicken broth to a gentle boil.
    2. Prepare the Garlic Mixture: In a separate pan, melt butter or heat oil over medium heat. Add minced garlic and coriander, sautéing until fragrant and lightly golden.
    3. Combine and Cook: Add the garlic mixture to the boiling broth. Stir in the thawed molokhia. Reduce heat & boil for about Five minutes—season with salt and pepper.
    4. Serve: Ladle the molokhia over cooked rice or serve alongside bread.

    3. Fattah

    Fattah

    Fattah is a celebratory Egyptian dish featuring layers of toasted pita bread, rice, and meat, all topped with a garlicky tomato sauce. 

    It’s a flavorful and comforting meal, suitable for special occasions or a delightful summer dinner.

    Ingredients:

    • 2 cups cooked rice
    • 2 pita breads, toasted and broken into pieces
    • 1 pound beef or lamb, cut into cubes
    • 4 cloves garlic, minced
    • 2 cups tomato sauce
    • 2 tablespoons vinegar
    • 2 tablespoons butter or oil
    • Salt and pepper to taste

    Instructions:

    1. Cook the Meat: In a pot, boil the meat cubes until tender. Drain and set aside.
    2. Prepare the Tomato Sauce: In a pan, melt butter or heat oil over medium heat. Add minced garlic and sauté until fragrant. Stir in tomato sauce and vinegar. Simmer for 10 minutes. Season with salt and pepper.
    3. Assemble the Fattah: In a serving dish, layer the toasted pita pieces. Top with cooked rice.
