    Sheet pan dinners are delicious! These dishes are tasty and simple to prepare.  You can cook potatoes, broccoli, peppers, and other veggies on the same sheet pan as the chicken. 

    Additionally, it’s quite simple to clean up after, which spares me from tense weeknights!

    These recipes are perfect whenever you want to eat something simple and flavorful!

    Sheet Pan Parmesan Chicken and Veggies:

    I love Sheet-Pan Parmesan Chicken and Veggies!  It’s a simple but delicious and hearty meal: chicken breasts coated in a Parmesan cheese mixture and served with bread crumbs. 

    Roasted sweet potatoes and green beans are also on top, making this meal even more yummy.  This sheet-pan meal is perfect for my family and me for dinner!

    Sheet Pan Parmesan Chicken and Veggies

    Ingredients:

    • Chicken Breasts: Boneless, skinless, fresh, or thawed.
    • Potatoes: Sweet potatoes, russet or golden.
    • Veggies: Green beans or your favorite veggies.
    • Light Mayo and Greek Yogurt for the creamy mixture.
    • Parmesan Cheese: Fresh grated, for taste.
    • Oil: Olive oil for potatoes and veggies.
    • Seasonings: Garlic, breadcrumbs, salt, pepper.  You can use your favorite seasonings, too.

    Instructions:

    1. Line a sheet pan with parchment paper and preheat the oven to 400°F.  
    2. Combine the oregano, parsley, paprika, garlic powder, salt, and pepper in a bowl.  
    3. Scatter the seasoning mix over the vegetables on the sheet pan and drizzle with olive oil.  
    4. Apply the flour, melted butter, and Parmesan mixture to the chicken.  
    5. Put the chicken in the oven pan and bake it for 25 to 30 minutes.  For the final 15 minutes, add the green beans and bake them.

    Sheet Pan Baked Chicken Breast with Veggies:

    This 40-minute dinner meal is quick and simple to prepare.  You can also bake chicken and vegetables in a single pan to prepare a tasty and nutritious lunch.  

    It is ideal for meal planning and may be topped with your preferred vegetables.  Let’s create it and have fun!

    Sheet Pan Baked Chicken Breast with Veggies

    Ingredients:

    • Before anything else, you will need two medium chicken breasts (boneless and skinless). 
    • Seasonings (salt, pepper, dried oregano, onion powder, paprika, and garlic powder). 
    • Oil (you may use any oil, but I prefer olive oil). 
    • Broccoli. 
    • Bell pepper in red. 
    • I use a red or purple onion, but you can use any kind you like.

    Instructions:

    1. Preheat the oven to 400 degrees Fahrenheit. 
    2. Cover a sheet pan with parchment paper. 
    3. Prepare the chicken breast with masala and olive oil. 
    4. Prepare the vegetables separately and place them on a sheet pan. 
    5. Bake the chicken and vegetables for 25-30 minutes until the chicken is cooked and the vegetables are soft. 
    6. Before serving, slice the chicken and garnish with parsley.

    Chicken Cutlets with Brussels Sprouts & Sweet Potatoes:

    This sheet-pan dinner is super easy and perfect for weeknights, in which the chicken cutlets and vegetables are seasoned in separate stages, which adds depth to the flavor. 

    Adding crumbled bacon adds a salty and delicious twist.  Enjoy it with your family and friends, and you can customize it to their needs!

    Adding your favorite vegetables and seasonings can make this even more delicious.  You will love it!

    Chicken Cutlets with Brussels Sprouts & Sweet Potatoes

    Ingredients:

    • 1 pound sweet potato, chopped into 1/2-inch thickness
    • 2 tablespoons olive oil (use as needed)
    • ¾ teaspoon salt (separately for vegetables and chicken)
    • ¾ teaspoon black pepper (separately for vegetables and chicken)
    • 4 cups Brussels sprouts, chopped and cut into half or quarters
    • 1 ¼ pounds chicken cutlets seasoned with fennel powder
    • 3 tablespoons crispy cooked bacon, crumbled

    Instructions:

    • Preheat the oven to 220°C.  Season the Brussels sprouts and sweet potatoes with salt, black pepper, and olive oil and roast them on a baking pan. 
    • After applying fennel powder to the vegetables, arrange the chicken on top of them. 
    • Bake for fifteen to twenty minutes. 
    • Serve the chicken with the bacon mixed in with the vegetables.  This is going to be a delicious lunch!

    Harissa Chicken & Vegetables:

    This one-pan dinner has flavorful heat thanks to harissa, a famous chili and garlic paste from North Africa.  

    In this recipe, we use harissa paste from the tube.  Its concentrated chili flavor makes an excellent spice rub for chicken and adds a subtle punch to the herbed yogurt sauce.

    I definitely make this during dinner time for my family, and they love it! 

    Harissa Chicken & Vegetables

    When we all sit together and eat this, it becomes a memorable moment.  I am very excited to share this recipe with you!

    Ingredients:

    • 4 cups cauliflower
    • 4 cups bell peppers
    • 3 tablespoons olive oil
    • Salt and harissa paste
    • 2 chicken breasts
    • ½ cup Greek yogurt
    • Lemon zest, lemon juice, mint, parsley and pepper.

    Instructions:

    1. Heat the oven to 220°C.  Mix the bell peppers and cauliflower with olive oil, harissa paste, and salt, then roast on a baking sheet for 15-20 minutes. 
    2. Then mix chicken with olive oil, harissa paste and salt and keep with the vegetables. 
    3. Roast the chicken for 15-20 minutes. 
    4. Mix yogurt, lemon juice, lemon zest, black pepper, mint, and parsley to make a sauce.  Serve it with chicken, and enjoy!
