- 2 cans of brown lentils
- 1/2 teaspoon coriander powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 container fried onions
Tomato Chutney:
- 1 tablespoon olive oil
- 1 small onion, grated
- 4 garlic cloves, chopped
- 1 teaspoon coriander powder
- 1/2 teaspoon red pepper powder
- 1 can tomato chutney (28 oz)
- Salt and black pepper according to taste
- 1 tablespoon vinegar
Cumin Chutney:
- 1 tablespoon olive oil
- 2 cloves of garlic, chopped
- 1 tablespoon cumin powder
- 1/4 cup water
- 1/4 cup vinegar (red wine or white)
- Salt according to taste
Instructions:
- The tomato sauce Heat the oil and sauté the garlic and onion. Stir in the red chile and coriander.
- Cook the tomato sauce and salt until it thickens.
- Pour in vinegar and keep warm.
- The Cumin Sauce: Warm up the oil and toast the cumin and garlic.
- Mix in the salt, vinegar, and water, then keep warm.
- Koshari should be ready: Lentils, rice, pasta, and chickpeas should all be kept apart.
- Pour in the cumin sauce and tomatoes. On top, add the fried onions.
Ful Medames:
Ful Medames is a fun and healthy breakfast option that even kids would love! In this, beans are cooked on a low flame, and butter or olive oil is applied. It is served with fresh pita bread. Kids would love both its taste and texture!

Ingredients:
- 1.5 pounds dried fava beans or broad beans
- Crush two cloves of garlic
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon cumin powder
- Pita bread and fried egg ( for serving)
Instructions:
- Soak the fava beans in water overnight. Drain the water in the morning, and cook them in fresh water on low flame for 45 minutes to 1 hour until they become soft.
- Drain the water and place the fava beans in a medium bowl. Mix all the other ingredients. You can mash and mix the fava beans or do a straight mix. This mashed dish is generally served.
- Serve hot, top with fried egg and pita bread.
Tamiya:
My kids’ favorite Egyptian snack is Tamiya! These crunchy balls are made with broad beans, parsley, and spices. We can eat them alone or serve them in a pita sandwich with tomatoes, cucumber, and tahini. They taste amazing!

Ingredients:
- 2 cups dried fava beans (split)
- 1 red onion, quartered
- 1/2 cup fresh parsley
- 1/2 cup fresh cilantro
- 1/2 cup fresh dill
- 3 cloves of garlic
- 1/2 teaspoon coriander powder
- 1/2 teaspoon salt
- 1 teaspoon cumin powder
- 1 cup sesame seeds (optional)
- 1-quart vegetable oil for frying (as per requirement)
Instructions:
- Soak fava beans in water for 8 hours. Drain the water.
- Mix the soaked fava beans, onion, parsley, cilantro, dill, garlic, coriander powder, salt, and cumin powder to form a dough-like consistency.
- Lightly fry the sesame seeds.
- Make balls from the fava bean mixture and roll in sesame seeds.
- Fry the Tamiya balls till they turn golden brown. Dry on a paper towel.
