    1. Sheet Pan Salmon with Roasted Vegetables

    Sheet Pan Salmon with Roasted Vegetables

    Ingredients:

    • 2 salmon fillets
    • 1 cup broccoli florets
    • 1 cup diced sweet potatoes
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika

    Instructions:

    1. Preheat your oven to 400°F (200°C).
    2. Place the salmon fillets on a baking sheet lined with parchment paper.
    3. In a bowl, toss the broccoli and sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
    4. On the baking sheet, arrange the fresh veggies around the salmon.
    5. Bake for 20-25 minutes, until the salmon flakes easily with a fork and the vegetables are tender.
    6. Let it cool, then divide into meal prep containers.

    2. Teriyaki Salmon Rice Bowls

    Teriyaki Salmon Rice Bowls

    Ingredients:

    • 2 salmon fillets
    • 1/4 cup teriyaki sauce
    • 1 cup cooked brown rice
    • 1 cup steamed broccoli florets
    • 1/2 cup shredded carrots
    • 1 tablespoon sesame seeds (optional)

    Instructions:

    1. Marinate the salmon fillets in teriyaki sauce for at least 30 minutes.
    2. Preheat your oven to 375°F (190°C).
    3. Arrange the marinated salmon on a parchment paper-lined baking sheet.
    4. The salmon should be cooked in the oven for fifteen to twenty minutes.
    5. In meal prep containers, layer brown rice, steamed broccoli, and shredded carrots.
    6. Place the cooked salmon on top and sprinkle with sesame seeds if desired.

    3. Mediterranean Salmon with Couscous

    Mediterranean Salmon with Couscous

    Ingredients:

    • 2 salmon fillets
    • 1 cup cherry tomatoes, halved
    • 1/2 cup chopped cucumber
    • 1/4 cup sliced red onion
    • 1/4 cup crumbled feta cheese
    • 1 cup cooked couscous
    • 2 tablespoons olive oil
    • Juice of half a lemon
    • Salt and pepper to taste

    Instructions:

    1. Preheat your oven to 400°F (200°C).
    2. Arrange the salmon fillets on a parchment paper-lined baking pan.
    3. Season with salt and pepper and drizzle with one tablespoon of olive oil.
    4. The salmon should be cooked in the oven for 15 to 20 minutes.
    5. In a bowl, combine cherry tomatoes, cucumber, red onion, feta cheese, remaining olive oil, lemon juice, salt, and pepper to make a Mediterranean salad.
    6. In meal prep containers, layer cooked couscous and Mediterranean salad, and top with the baked salmon.
