    Sweet corn and cheese make a delightful combination for meal prepping. Here are three simple and tasty recipes you can prepare ahead of time:

    1. Mexican Street Corn Casserole

    Mexican Street Corn Casserole

    Ingredients:

    • 2 boneless, skinless chicken breasts
    • 1 cup uncooked rice
    • 2 cups water
    • 1 can whole sweet corn, drained
    • 1/2 red onion, finely chopped
    • 1/4 cup light mayonnaise
    • 1/4 cup Crema Mexicana (or sour cream)
    • 1/4 cup crumbled Queso Cotija (or feta cheese)
    • 1/2 teaspoon chili powder
    • Salt and pepper to taste
    • Fresh cilantro, chopped (for garnish)

    Instructions:

    1. Cook the Chicken and Rice: In a large pot, combine the chicken breasts, rice, and water. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is tender and the chicken is cooked through about 20 minutes. After taking out the chicken, shred it and put it aside.
    2. Prepare the Casserole Mixture: In a large bowl, mix the cooked rice, shredded chicken, sweet corn, red onion, mayonnaise, Crema Mexicana, Queso Cotija, chili powder, salt, and pepper until well combined.
    3. Assemble and Bake: Set the oven temperature to 175 degrees Celsius (350°F). Pour the mixture into a baking dish that has been oiled. Bake for 20 to 25 minutes, or until cooked through and the top is beginning to turn brown.
    4. Garnish and Serve: Sprinkle with chopped cilantro before serving. This casserole can be portioned into meal prep containers and stored in the refrigerator for up to 4 days.

    2. Korean Corn Cheese

     Korean Corn Cheese

    Ingredients:

    • 3 cups corn kernels (fresh, frozen, or canned)
    • 2-3 tablespoons mayonnaise
    • 1 teaspoon sugar
    • 2-3 tablespoons green onions, finely chopped
    • 1 cup mozzarella cheese, shredded
    • Salt and pepper to taste
    • 1 teaspoon butter (for greasing the baking dish)

    Instructions:

    1. Preheat Oven: Set your oven to 400°F (200°C). Grease a cast iron skillet or oven-proof dish with butter.
    2. Mix Ingredients: In a large bowl, combine the corn, mayonnaise, sugar, green onions, salt, and pepper. Mix well.

    • 1 (15.25-ounce) can whole kernel corn, with liquid
    • 1 (14.75-ounce) can cream-style corn
    • 1 cup small uncooked macaroni pasta
    • 1 cup cubed processed cheese (such as Velveeta)
    • 1/2 cup butter, cut into pieces

    Instructions:

    1. Preheat Oven: Set your oven to 350°F (175°C).
    2. Combine Ingredients: In a large bowl, stir together the whole-kernel corn, cream-style corn, uncooked macaroni, processed cheese, and butter until well combined.
    3. Bake: Transfer the mixture to a casserole dish. Bake, covered, for 30 minutes in a preheated oven. Uncover, stir, and continue baking for an additional 30 minutes until the macaroni is tender.
