1. Mashed Potato Nuggets

- 2 cups cooked mashed potatoes

- ⅔ cup flour
- 2 eggs, lightly beaten
- 1 teaspoon salt
- Pepper to taste
- 2 tablespoons chopped chives or spring onions (optional)
- Olive oil or butter for frying
Instructions:
- In a mixing bowl, combine the mashed potatoes, grated cheese, flour, beaten eggs, salt, pepper, and chives or spring onions if using. Mix until well combined.
- Heat a non-stick frying pan over medium-high heat and add a little olive oil or butter.
- Spoon about two tablespoons of the mixture for each nugget into the pan. Using the back of the spoon, gently flatten.
- Fry for about 1 minute or until golden brown, then flip and cook the other side until golden.
- Remove the potatoes from the pan & drain all of it on paper towels. Serve these mashed potato nuggets warm.

Ingredients:
- 1½ pounds Yukon Gold baby potatoes (or similar white or yellow potatoes)
- 2 cups broccoli florets
- 2 tablespoons unsalted butter or olive oil

- Salt to taste
Instructions:
- Wash and dice the potatoes into small pieces.
- Put the potatoes in a big pot and add enough water to cover them. Bring to a boil, then reduce heat and simmer until tender, about 10 minutes.
- In the last 5 minutes of cooking, add the broccoli florets to the pot with the potatoes.
- Drain the potatoes and broccoli.
- Return the drained potatoes and broccoli to the pot. Add the butter or olive oil, Greek yogurt or sour cream, and salt.

- Fill the potato skins with the mixture and place back in the oven for 5 minutes until golden.
